The lentil is the seed of an annual plant of the legume family, native of Asia and the Mediterranean. These seeds are round and flat, ranging in colour from yellow to green to brown. The flavor of lentils varies, depending on the size and colour, but generally the smaller seeds are tastier. This species of legume is purchased only dry. The lentils of Castelluccio di Norcia are the smallest and considered the tastiest. Preservation: Store in a tightly closed jar and if you buy in bulk, keep in a cool, dry and dark place. They will keep for up to two years. Characteristics: Rich in sugar, protein and iron; lentils help with problems of anemia or physical exhaustion. Lentils are much more digestible than other legumes.

SAFFRON

In ancient Rome and Greece, saffron was used, not only as a flavoring with the power to bestow mirth and sexual vigor, but also as a dye and perfume. Is out of the question The reputation of saffron is indisputable; in ancient documents it was credited with the power to make men happy and permeate great joy. The saffron harvest spans a four week period between mid-October and early November. The flowers are painstakingly picked at dawn and are immediately processed carefully by hand; resulting in a high quality product. This explains the high cost of the product; in fact, about 200.000/250.000 flowers are needed to obtain a kilogram of dried saffron. In Italy, saffron is primarily produced in Umbria around Cascia, in Abruzzo around Navelli, in Sardinia and in Tuscany around Siena. Evidence shows that crocins contain the highest percentage of Carotenoids. They are tremendous natural antioxidants and contain vitamins B1 and B2 that contribute to the metabolism of fat. They are an excellent digestive.
